Crisp and flavorful, onions not only accent recipes but also serve as one of nature’s health foods. Onions help guard against cataracts, cardiovascular disease, cancer and may help lower cholesterol levels. At only 30 calories per serving, they are sodium, fat and cholesterol-free and provide dietary fiber, vitamins C and B6 as well as potassium.
Currently, onions represent the third largest fresh vegetable commodity in the United States. The average American consumes 18.7 pounds of the tearful bulbs each year — which seems like a lot. But Libyans have us beat by a long shot. With 66.8 pounds of onions per person each year, Libya comes in at first place for onion consumption!
When buying onions, look for dry outer skins free of spots or blemishes. The onion should be heavy for its size with no scent. Store onions in a cool, dry, well-ventilated place. Do not store onions in plastic bags.
You can reduce tearing when cutting onions by first chilling for 30 minutes. Cut off the top and peel the outer layers leaving the root eye intact. The root end has the largest concentration of sulphuric compounds, which make your eyes tear.
